Serves 4

Change the Serving Size

12 ounces boneless chicken
2 tablespoons sesame oil
1 cup chicken broth
2 tablespoons cornstarch
1/2 teaspoon ginger
1/4 teaspoon rosemary
4 carrots
2 stalks celery
16 leaves spinach
24 sugar snap peas
2 tablespoons & 2 teaspoons sesame seeds

Directions
  1. Cut chicken into cubes and brown in sesame oil over medium heat.
  2. Dissolve cornstarch in chicken broth and add to chicken. Stir and reduce heat to medium-low.
  3. Grate ginger and stir into chicken along with rosemary.
  4. Sliver carrots and slice celery on the diagonal and add to chicken. Return heat to medium and stir as sauce thickens and vegetables become tender.
  5. Cut spinach leaves into thin strips and add to pan with pea pods. Reduce heat to medium low, stir and cook just until peas are tender-crisp.
  6. Top with sesame seeds.
