White and Black Bean Smothered Salmon

How many servings?


From kitchen to table in 30 minutes.

drained, canned white beans
drained, canned black beans
tomato
green bell pepper
onion
fresh cilantro
red wine vinegar
lemon juice
olive oil
garlic, minced
salmon fillet
grapes


Full-day menu and grocery shopping list to accompany White and Black Bean Smothered Salmon

Directions

  1. Drain and rinse beans and place in a container with a lid.
  2. Chop tomatoes, green pepper, onions and cilantro and add to beans.
  3. In a small bowl, mix together vinegar, lemon juice, olive oil and garlic. Pour over beans and vegetables.
  4. Place cover over container and shake to blend. Set aside.
  5. Place salmon fillet on a broiler pan and place under broiler. Cook until lightly brown. Turn and brown second side.
  6. Smother salmon with beans and serve with grapes.
