Spicy Bean and Rice Skillet

Quick and easy vegetarian meal with healthy, high-fiber black beans.

Serves 4

Change the Serving Size

4 teaspoons olive oil
2 cloves garlic
4 ounces onion
4 ounces green bell pepper
4 ounces red bell pepper
1 cup canned black beans
1 cup canned diced tomatoes with green chilies
1/2 cup whole kernel corn
1/2 cup uncooked rice
1/2 cup water
1 dash oregano
1 dash cayenne pepper
2 ounces mozzarella cheese
4 ounces cheddar cheese

Directions
  1. Heat oil in a skillet over medium heat. Add garlic and onion, cook until tender.
  2. Add peppers and cook another 5 minutes.
  3. Drain and rinse black beans and add to skillet along with undrained tomatoes, corn kernels, uncooked rice and water.
  4. Sprinkle oregano and cayenne pepper over top and stir to mix.
  5. Cover and reduce heat to low. Simmer for 40 minutes or until rice has absorbed all the moisture.
  6. Grate cheeses and sprinkle over the top. Turn heat back to medium and cook until cheese has melted.
