Shrimp Fried Rice

water
uncooked brown rice
olive oil
onion
garlic

frozen mixed vegetables

hoisin sauce

Directions

  1. In a saucepan, heat water on high heat until boiling. Stir in rice, cover and reduce heat to lowest setting. Allow rice to cook without lifting cover for 45 minutes.
  2. When rice has cooked for 30 minutes, heat oil in a large skillet or wok over medium heat. Dice onion and garlic and add to hot oil. Brown while stirring for 2 minutes.
  3. Add shrimp to skillet and cook for 5 minutes stirring often.
  4. Add vegetables to skillet and cook for another 2 minutes to heat vegetables thoroughly. Stir often.
  5. Beat eggs and mix with hoisin sauce. Pour into skillet with shrimp and vegetables. Cook and stir until eggs are cooked.
  6. Add rice to skillet and stir until rice is completely mixed and all the moisture has been absorbed.
