Scrambled Tomato Crunch

Full-day menu to accompany Scrambled Tomato Crunch

Directions

  1. Break eggs into a mixing bowl. Beat until frothy.
  2. Dice tomato and onion and add to eggs. Sprinkle with salt and pepper and mix.
  3. Melt margarine in a skillet over medium-low heat. Pour in egg mixture and stir.
  4. Continue cooking and stirring until eggs are firm.
  5. Split English muffin and spread with butter or margarine.
  6. Transfer eggs to a casserole dish. Top with crumbled tortilla chips and cheese.
  7. Place English muffin halves and cheese-topped eggs under a broiler. Heat until cheese melts and muffins are browned.
  8. Serve with grapefruit.
