Directions

  1. If cooking over charcoal, start grill 2 hours before serving time. If using oven, preheat to 350 degrees
  2. When coals are ready, slice potatoes and pepper and place on a large piece of foil. Top with margarine and sprinkle with garlic salt.
  3. Seal foil and place on grill, margarine side up. Cover.
  4. After potatoes have cooked for 20 minutes, prepare fish. Wrap bacon slices around fish fillet and lay on a large piece of foil. Spoon Ranch salad dressing over fish. Sprinkle with pepper and seal foil. Using another piece of foil, wrap again with seal on opposite side.
  5. Place fish on grill with dressing side up. Cover.
  6. Cook for 45 minutes and then turn both potatoes and fish.
  7. In another 30 minutes check for doneness. Potatoes should be tender and bacon thoroughly cooked. (For crispier bacon, place under a broiler for a minute or two.)
