Ranch Pasta with Shrimp

Serves 4

Change the Serving Size

8 ounces small shell pasta
2 teaspoons butter or margarine
4 ounces red bell pepper
1/2 cup ranch salad dressing
4 teaspoons lime juice
2 tablespoons water
2 tablespoons cornstarch
1 dash pepper
4 stalks fresh cilantro
12 ounces tiny canned shrimp

  1. Heat a large saucepan of water on high for pasta.
  2. Dice red bell pepper and sauté in butter or margarine on medium high until tender-crisp.
  3. Mix together ranch salad dressing, lime juice, water, and cornstarch. Add to cooked peppers, heat over low until thickened stirring frequently.
  4. Chop cilantro and stir into sauce
  5. Cook pasta in boiling water until done (about 5 minutes).
  6. Drain shrimp and stir gently into sauce.
  7. Drain and rinse pasta and place in a serving bowl. Pour shrimp sauce over pasta.
