Ham and Black Beans over Green Rice

Fragrant fresh basil is the green in this easy rice dish. Top with spicy ham and black beans.

water
uncooked brown rice
fresh basil
ham
canned black beans undrained
cumin
salsa
garlic
grated Parmesan cheese

Directions
  1. Heat water on high until boiling. Stir in rice, cover and turn heat to the lowest setting. Cook rice without lifting lid for 30 minutes.
  2. Chop basil very fine and stir into rice. Replace lid. If moisture remains, continue cooking over low.
  3. Chop ham into cubes and place in a skillet. Turn heat on to medium and cook until ham is lightly browned. Add undrained beans, cumin and salsa. Crush and chop garlic and add to skillet.
  4. Pour rice onto a serving platter and top with ham and beans, grated Parmesan cheese and pine nuts.
