Potato Cakes

Combine shredded potatoes and zucchini with eggs and cheese, shape into patties and sizzle up some crispy potato patties to serve with a fresh salad.

2 eggs
1 cup frozen hashbrown potatoes, thawed
1 cup shredded zucchini
2 ounces red onion, diced
1 1/2 ounce shredded pepper jack cheese
2 ounces shredded cheddar cheese
1/4 cup picante sauce
4 teaspoons olive oil
4 side salads

From kitchen to table in

Directions

  1. Crack eggs into a mixing bowl and beat until fluffy. Add thawed hashbrown potatoes, zucchini, onion, cheese and picante sauce. Mix until well blended.
  2. Pour oil into a skillet and turn heat on to medium.
  3. Shape potato mixture into patties with your hands. Place in skillet and cook until both sides are brown and crispy. Turn often.
  4. Serve with salad
