Peruvian Steak and Pasta Stir Fry

Serves 4

Change the Serving Size

6 ounces penne pasta
2 tablespoons olive oil
12 ounces beef sirloin strips
8 ounces onion
12 ounces broccoli
2 tablespoons low-sodium soy sauce
1/4 cup salsa
1/4 teaspoon dried cilantro
1 dash pepper
16 tomato wedges

  1. Heat a large saucepan of water 3/4 full on high heat for pasta.
  2. Saute beef strips in oil over medium heat until lightly browned.
  3. Chop onion and add to beef in skillet.
  4. Cook pasta in boiling water until tender (8 to 10 minutes).
  5. While pasta cooks, chop broccoli and add to skillet
  6. Mix soy sauce and salsa together and pour over meat and vegetables. Sprinkle with cilantro and pepper.
  7. Add tomato wedges to skillet, stir, cover and turn heat to medium-low.
  8. Drain and rinse pasta. Add to skillet, stir to mix and serve.
