Mexican Ham and Cheese Sandwiches

Ham, peppers, cheese and a spicy Mexican sauce make these tortilla wrap sandwiches healthy and delicious.

Serves 4

Change the Serving Size

8 ounces ham
2 tablespoons olive oil
2 ounces onion
2 ounces green pepper
2 ounces red pepper
2 ounces yellow pepper
1 tablespoon & 1 teaspoon salsa
1 tablespoon & 1 teaspoon canned diced jalapenos
4 ounces cheddar cheese
4 flour tortillas
non-stick cooking spray
tortilla chips

Grocery Shopping List for Mexican Ham and Cheese Sandwiches

From kitchen to table in

  1. Dice ham and brown in oil over medium-low heat.
  2. Dice onion, red, green and yellow peppers and add to ham.
  3. Add salsa and diced jalapenos. Stir and cook over medium-low heat until vegetables are lightly tender.
  4. Preheat oven to 400 degrees.
  5. Spray a baking dish with non-stick spray.
  6. Cut cheese into slices.
  7. Spoon ham and pepper mixture into center of tortilla. Top with cheese slices. Fold tortilla over. Secure with toothpicks if necessary.
  8. Bake in oven until cheese is melted. (About 10 minutes.)
  9. Serve with tortilla chips.
