Italian Pork Noodles with Mediterranean Toasted Bread

boneless pork loin
onion
olive oil
canned diced tomatoes
Italian seasonings
spaghetti
garlic
fresh basil
sun-dried tomatoes
olive oil

Directions

  1. Cut pork into cubes and dice onion. Sauté in oil on medium heat until pork is cooked through.
  2. Add undrained tomatoes and Italian seasonings. Turn burner to low and cover.
  3. Heat a large pan of water on high for pasta.
  4. While water heats, mince garlic, basil and sun-dried tomatoes. Mix with olive oil.
  5. Add pasta to boiling water and continue cooking on high heat. Stir occasionally.
  6. Spread the garlic and olive oil mixture over bread slice. Place under hot broiler.
  7. Toast bread under broiler until golden brown.
  8. Drain and rinse noodles, top with sauce and serve with bread and salad.
