Fajita Pasta

Serves 4

Change the Serving Size

6 ounces angel hair pasta
2 teaspooons olive oil
10 ounces boneless skinless chicken breast
4 ounces onion
4 ounces green bell pepper
4 ounces yellow bell pepper
3/4 cup canned green chilies
1/2 cup salsa
12 stalks fresh cilantro

  1. Cut chicken into thin strips.
  2. Heat olive oil in a skillet over medium-high heat. Add chicken and cook for 5 minutes or until no longer pink.
  3. Heat water in a large saucepan on high for pasta.
  4. Dice onion and peppers. Add to skillet. Continue to cook over medium-high..
  5. Cook pasta in boiling water for five minutes.
  6. While pasta cooks, stir chilies and salsa into skillet with chicken. Turn heat to low.
  7. Mince fresh cilantro and add to skillet.
  8. Drain pasta and top with chicken and vegetables.
