Chicken Salad Sandwiches with Garden Potato Salad

Garden Potato Salad
potato
onion
green bell pepper
garlic
broccoli
celery
radish
mayonnaise
Italian Salad Dressing
pickle relish
mustard
lemon juice
red wine vinegar
pepper
Italian seasonings
dill weed
salt

Chicken Salad Sandwiches
canned, cooked chicken
onion
green pepper
garlic
mayonnaise
Italian salad dressing
pickle relish
lettuce
bread

Directions

  1. Place potatoes in a large saucepan and completely cover with water. Boil at medium-high heat until soft, about 45 minutes.
  2. Cool potatoes in refrigerator for at least 30 minutes.
  3. Remove skin from potatoes and cut into small pieces. Place in a large mixing bowl.
  4. Drain chicken and place in a mixing bowl.
  5. Mince onions, green pepper and garlic, enough for both salad and sandwiches. Add to potatoes and to chicken.
  6. Dice broccoli and celery and add to potatoes.
  7. Thinly slice radish and add to potatoes.
  8. Measure mayonnaise, Italian dressing and pickle relish and add to both potatoes and chicken.
  9. Add mustard, lemon juice, red wine vinegar, pepper, Italian seasonings, dill weed and salt to potatoes.
  10. Mix both potatoes and chicken salad well.
  11. Place chicken mixture onto bread, top with lettuce leaf and serve sandwiches with potato salad.
