Chicken Quesadillas

Cook this easy chicken quesadilla recipe in hot olive oil for a light and crispy tortilla.

Serves 4

Change the Serving Size

8 flour tortillas
8 ounces cheddar cheese
12 ounces canned chicken
2 ounces onion
2 ounces green bell pepper
2 ounces red bell pepper
enough to just cover the bottom of the pan cooking oil

Directions

  1. Shred cheese, drain chicken and dice vegetables.
  2. Pour olive oil into a skillet, enough to just cover the bottom. Heat over medium-high heat.
  3. Place one tortilla on a flat surface. Layer half the shredded cheese, chicken, vegetables and remaining cheese onto the tortilla.
  4. Place the other tortilla on top.
  5. Use a wide pancake turner to carefully place the quesadilla in the hot oil.
  6. When the first side is brown, flip the quesadilla with the pancake turner.
  7. Brown the other side. Cut into slices with a pizza cutter.
