Cheese Pizza Burrito

Wrap a flour tortilla burrito-style around mozzarella cheese and Italian tomatoes for a pizza you can take anywhere. Serve with salad for a complete meatless meal.
2 cups canned diced tomatoes Italian style
2 ounces onion
4 sprigs fresh cilantro
2 cloves garlic
4 flour tortillas
1 cup grated mozzarella cheese
From kitchen to table in
- Place undrained tomatoes in a skillet. Dice onion, cilantro and garlic and add to tomatoes. Heat on medium until warm.
- Turn oven on to 400 degrees.
- Spoon warm tomatoes and vegetables onto flour tortillas. Top with cheese. Fold the sides over the filling and then the ends, burrito-style.
- Place fold-down in a baking dish and place in oven. Bake for 10 minutes or until lightly golden. Serve with salad.
