Applesauce Cupcakes

Makes 12 cupcakes

2 eggs
1 1/2 cups applesauce
1 1/2 cups sugar
1/2 cup cooking oil
2 1/2 cups flour
1 teaspoon baking powder
1/2 teaspoon baking soda
2 teaspoons pumpkin pie spice
1 cup chopped nuts
12 paper baking cups

Directions

  1. Preheat oven to 350 degrees.
  2. Line muffin tins with paper baking cups.
  3. Blend eggs, applesauce, sugar and cooking oil together in a large mixing bowl.
  4. Dump flour onto applesauce mixture. Sprinkle baking powder, baking soda and pumpkin pie spice over the flour. Using a fork blend leavening and spices into the flour. Continue mixing until the dry ingredients are completely blended into the applesauce mixture.
  5. Sprinkle nuts over the tops of the cupcakes.
  6. Spoon batter into baking cups 3/4 full. Place in hot oven and bake for 20 minutes or until a toothpick inserted in the center of one of the cupcakes comes out clean.
